The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

For the Citrus Syrup: Put all the items into a pan, heat until it reaches a light boil, stirring so the sugar melts. After that, turn off the stove and leave to cool down fully. Decant into a clean bottle, close it and store in the fridge, it can be stored for around four weeks.

Preparing the Batch Mix: Pour the specified liquids into one big jug, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's fully clarified.

For serving: Pour 85ml of the batch mix into a mixing glass containing ice, gently stirring lightly for one minute to chill. Filter into a frosted cocktail glass or similar, top with some cranberries adding the final touch using a quick spritz of the essential oil over the drink.
